Ann Diker, PhD, RDN

Biography

Dr. Ann Diker is a Full Professor in the Department of Nutrition at Metropolitan State University of Denver (º£½ÇÉçÇø) and a Registered Dietitian Nutritionist (RDN). She earned her PhD in Nutritional Science and MS in Human Nutrition from Colorado State University, following a BA in Accounting and Business Administration from Briar Cliff University. She has taught undergraduate and graduate nutrition courses at º£½ÇÉçÇø since 2001. 

Dr. Diker’s work focuses on nutrition education, student success, dietetics workforce development, and innovative teaching practices in higher education. She has led and collaborated on projects examining peer mentoring, advising, and student support programs. Her research has been presented at national and international conferences, including the Academy of Nutrition and Dietetics’ Food & Nutrition Conference & Expo, the Society for Nutrition Education and Behavior, the Hawaii International Conference on Education, and the Paris Conference on Education.

In addition to her teaching and research, Dr. Diker has secured significant external funding, including serving as Principal Investigator for a $3.25 million HRSA Scholarships for Disadvantaged Students grant (2020-2025). She is an advocate for student-centered learning, Open Educational Resources (OER; free course materials), and increasing access to nutrition and dietetics education for diverse student populations.
