Biography
Dr. DiMarco is a lecturer in the Department of Nutrition at Metropolitan State University of Denver (º£½ÇÉçÇø). Dr. DiMarco received her BS in biology and anthropology from Western Washington University and her MS and PhD in Nutritional Sciences from the University of Connecticut, where her research focused on the impacts of daily egg intake on biomarkers of cardiovascular disease in healthy populations. She is also a Registered Dietitian (RDN).
During her time at º£½ÇÉçÇø, she has taught numerous courses in the undergraduate and graduate program, including Introduction to Nutrition, Advanced Macronutrients, Advanced Micronutrients, Lifecycle Nutrition, and Graduate Research Capstone. She has also assisted in course development, the most recent of which is the department’s new Food Science lecture and lab.
Dr. DiMarco’s areas of expertise include nutritional biochemistry, metabolism, gut microbiota, and food science. Her work integrates scientific research with practical applications in nutrition and health, providing students with a strong foundation in evidence-based practice. In recognition of her commitment to student success and excellence in teaching, she was awarded the College of Health and Human Sciences (CHHS) Outstanding Teaching Award for 2023-2024.
